Their fragile texture melts in the mouth releasing the ocean’s strong influence on this shellfish and leaving behind a characteristic hint of iodine. A natural, intense taste of the sea, for those who enjoy rich, authentic flavours. To appreciate its quality, what better than to hear Julio Camba’s words dedicated to the sea urchin in one of his books: “…After eating fifteen or twenty dozen the best lobster will taste like a Galápagos tortoise because enjoying this shellfish is neither eating it nor drinking it but breathing in the ocean. No other shellfish encapsulates the sea in such a perfect way as does the sea urchin”. That is why these primitive beings occupy such a privileged position on the most elegant of tables.</p> <p>So that you can enjoy these sensations, Conservas Entreislas Sea Urchin Caviar is prepared by hand, removing the roe from the urchin in a very careful and completely artisanal way.
